The Migali C-SP27-12BT-HC prep table is designed to optimize salad and sandwich prep with a top compartment for pans, an integrated cutting board, and refrigerated storage base. The pan rail accommodates 12 sixth-size pans, but they are not included with the unit; the rail includes adapter bars that hold pans in place and accommodate fractional pans. Ingredients from the rail can be added to dishes as they are passed along the cutting board. The base has a shelf to maximize storage space and can be accessed behind a hinged door, and the door handle has a recessed design that eliminates protrusion into the aisle.

The refrigeration system in this Migali C-SP27-12BT-HC mega top prep table is self-contained and mounted at the rear. It evenly distributes cold air, maintaining a consistent level between 33 and 41 degrees Fahrenheit. Operators can set the unit to run at a specific temperature within this range on the digital controller and monitor it on the display.
